Isn’t there just something wonderful about recipes that are made with fresh ingredients? This salsa is so easy, yet the simple ingredients are a delight to the senses!
Looks great, tastes great and smells great!
Just place your yummy ingredients on a grill pan or baking sheet and roast on your grill or in the oven. I love all kinds of salsa, after all, I’m a New Mexican and I’ve enjoyed Mexican food all my life! This is great with tortillas chips, on tacos (oh yum!) or we enjoy it on grilled chicken or with a southwestern style salad. Versatility and deliciousness are the words here! My recipe is a guideline, and you can adjust it to your liking. We enjoy hot, spicy food so I always leave the seeds in the jalapenos, but if you prefer a more mild salsa it’s easy to decrease the number of jalapenos and remove the seeds after cooking. I place the roasted veggies in a food processor and pulse until I achieve the texture I want. Easy peasy!

I prefer my roasted salsa to have quite a bit of texture, so I definitely make it chunky! I love that you can see bits of everything, including some jalapeño seeds in the salsa. You can just see that it’s fresh and delicious! This flavorful salsa will keep everyone coming back for more.
Best Ever Roasted Salsa!
- 8 medium ripe tomatoes; halved
- 1-3 jalapeno peppers; remove stem
- 1/4 large red onion
- 1-2 garlic cloves; peeled
- 1/2 cup cilantro
- 1/2 lime; juiced
- 1 tsp Kosher salt
- Preheat oven to 400 degrees.
- Place tomatoes, jalapeños, onion and garlic on a baking sheet.
- Roast in oven for 25-30 minutes.
- Turn broiler on and place baking sheet on the middle rack.
- Broil for about 5-7 minutes then turn veggies over and broil for another 5 minutes.
- Allow them to cool and remove seeds from jalapeños if you don;t want your salsa as hot.*see notes
- Place veggies in a food processor.
- Add cilantro, lime and Kosher salt.
- Pulse in food processor until you obtain your desired consistency (I like mine kind of chunky)
- Taste and add addition salt as needed.
- Enjoy!
- *I leave the seeds in mine because I like hot salsa.
